Gluten Free Update

Well so far so okay!
I haven't missed my bread or pastas yet but it has only been 3 days
I found this banana bread recipe.
I did tweak it a bit but thats what I do to recipes.


1 and 1/4 cups gluten free flour (I used El Peto all purpose flour mix)
1 TSP baking soda

1 cup of sugar
2 eggs
6 TBSP canola oil
3 ripe bananas
2 TSP cinnamon
1/2 TSP salt

Mix bananas, eggs, oil, and sugar in a bowl and smush (yes that is a cooking term LOL ) together. Add the flour and baking soda. Mix until smooth. Pour into greased and floured loaf pan. Bake at 350 for 40 to 60 minutes.


 
It was delicious especially toasted with some butter.
 
It was pizza night last night.
I used this pizza crust.
 
 
Not impressed.
But I like a really thin crust and this one is very doughy.
I am going to make one from scratch next weekend.
Toppings were delicious.
 
 
Needed some bright on my nails today.

My amarylliseseses are very confused and have started blooming.
I am not complaining  !

The banana bread looks good. I think the Granary has classes on gluten free. You should talk to them. I hope you are feeling better today. My backs been out lately but I am just taking it easy, walking the dog slow and getting more rest. Kane slipped on the ice today and he's a little sore now too. We are a great pair.
